2011 Pumpkin pie and more contest winning recipe!

KAT'S EGGLESS PUMPKIN PIE
You would never know this is an eggless pumpkin pie recipe and it is SO easy!
Don'tworry if the filling seems to be runny. It firms up beautifully once baked. Enjoy!
2 c. fresh pumpkin puree (or you can use 1 16 oz. can of pumpkin)
1 TBS. cinnamon1 tsp. ginger
1/4 tsp. nutmeg
3 TBS. cornstarch
1/2 tsp. lemon extract
Pinch of salt
1 can of sweetened condensed milk
1. Preheat your oven to 450 degrees.
2. In a mixing bowl, stir cinnamon, ginger, nutmeg, corn starch, lemon extract andsalt into the pumpkin.
3. Add sweetened condensed milk to the mixture and stir well.
4. Pour filling into unbaked pie shell and bake.
5. Bake at 450 degrees for 10 minutes. Lower to 350 degrees for 1 hour.
6. Let cool and serve with whipped cream.
Tip - For perfect crusts I wrap a layer of tin foil around the pie crust edges untilthe last 20 minutes of baking. This prevents a burnt crust.
